My Upgraded Aperol Spritz Recipe Is So Peachy!

đŸ„‚Who else is on the corona Aperitivo train🚂? Here’s my elevated Aperol Spritz recipe that I whipped up one evening to welcome Doc home after another long day at his practice. It’s so refreshing and light.  Adding mint from my garden and sliced juicy peaches🍑 from Halsey Farm which is just up the road from my house really takes this summer classic cocktail up a notch.

1 1/2 ounces Aperol
3 ounces Prosecco
3/4 ounce sparkling water or club soda
Fresh sliced peaches and a handful of mint. (the classic recipe calls for a slice of orange only)
