NEW KDHamptons Recipe: Great Tasting Gluten-Free Pancakes

“We definitely have a favorite Sunday morning breakfast in the Rizzo household and hands down it’s pancakes, usually accompanied by crispy bacon,” shares Hamptons foodie, Jennifer Rizzo. “I always buy Applegate Naturals because they have no nitrites or nitrates, no antibiotics, and most importantly, their meat products are gluten free. Hickory Smoked Sunday bacon is our family favorite. My pancake recipe is as follows [usually I double it to have enough for our family of 5] as I have raised a pack of pancake enthusiasts,” says Jen.

 

 

 

Ingredients:

1 organic egg
1 tbsp organic Coconut Oil [heat the coconut oil in the microwave to liquify it]
3/4 cup 2% organic milk
1 cup of gluten free pancake/waffle mix

[Before serving I add shaved dark chocolate, sliced almonds, fresh strawberries and bananas and powered sugar]

So here’s why I use these ingredients: I try to go natural/ organic as much as possible, but most importantly always with eggs and milk. I have found that using Coconut Oil, [my go-to brand is Spectrum Organic found locally in the Hamptons at Wild by Nature and King Kullen] in place of vegetable oil gives the pancakes a much richer flavor. Also, instead of using water as many recipes call for the milk makes the difference!

 

 

 

 

Some of my favorite #glutenfree brands for pancakes are: Kinnikinnick [pictured above], Bob’s Red Mill and Cup4Cup. I have tried many over the years and these are the best! I have served these pancakes to family, friends and my children’s friends and they have no idea that they are healthy and gluten free . . . they are that tasty!

 

 

I like to experiment and put different toppings on my pancakes such as: grated coconut, all kinds of fresh fruit and melons, honey, nutella and even gouda cheese. You can really add whatever it is that you and your family love to make the pancakes special . . . even if it’s some M&M’s!

 

 

 

 

If you have no allergies this recipe still applies just use your favorite pancake mix and if you have more than gluten issues such as dairy-free or nut-free, adjust the milk to water or club soda and double check your flour for ingredients. And lets be honest who does not love #DessertForBreakfast?
