My friend Deb shared this deliciously decadent breakfast casserole recipe that her granny used to make.  Talk about comfort food~ I can’t wait to make this! Perfect for a lazy Sunday morning by the fire. Thanks Deb!

 

SAUSAGE BREAKFAST CASSEROLE

 

Ingredients:

1 small loaf good french bread
stick o butter
1 lb. breakfast/italian sausage (pork or turkey)
1 small bag shredded sharp cheddar cheese
dozen eggs, beaten
4 c. half and half  [you can use 2 lowfat milk and 2 half and half if
you want to cut some calories]
1 T of dijon mustard
shake of salt

Directions:

Butter a 13 x 9 x 2 inch baking dish; set aside.

Cut or rip up bread into chunks, put in a bowl.

Cook sausage until browned, stirring to crumbs; drain well. Spoon
over, sprinkle with 3/4 of the cheese and mix well. Dump into baking
dish. Beat eggs, dijon, half and half, and salt; mix well and pour
over bread, sausage, and cheese. Dump the rest of the cheese on top.
Cover casserole and chill overnight.

Remove casserole from refrigerator 15 minutes before baking. Bake
uncovered at 350 degrees for 45 minutes or until set. You may have to
put the foil back on for the last 10 minutes so the tops of the bread
don’t burn.

Yield 8 servings.
