Barons Cove

After an extensive, two year top-to-bottom renovation, Baron’s Cove is reopening to guests near and far this summer.  The new resort maintains the name and footprint of the original structure, which was the first resort development in Sag Harbor, while also expanding to include a new pool area, chic guest rooms, a restaurant and bar serving the freshest local dishes and drinks, and beautiful landscaping.  Baron’s Cove embraces the history of the original 1960’s hotel, which boasted prominent guests including: John and Elaine Steinbeck, Paul Newman, Art Garfunkel, Willem and Elaine de Kooning, Truman Capote, and Kurt Vonnegut, to name just a few— who regularly gathered in the restaurant and hotel to watch the sun set over the marina harbor.

Colleen Bashaw Interior Design spearheads the redesign of Baron’s Cove.  Bashaw has clients in Colorado, New York, New Jersey and Rhode Island.  Her love of art and design landed her a job at Parish Hadley, Inc. on Manhattan’s Upper East Side, years ago, where she was mentored by Libby Cameron; Sister Parish’s protégé.  Colleen is also the head of design for Cape Resorts, a real estate company in lower Manhattan.  Along with Cape she has completed The Congress Hall Hotel, The Virginia Hotel, The Sandpiper, The Star Inn, The Beach Shack, and now Baron’s Cove.  Colleen shares her plans for Baron’s Cove in this NEW KDHamptons Design Diary, below:

KDHamptons: What inspired you to take on this Hamptons project?

Colleen Bashaw: Cape Advisors purchased the building and asked me to do the design – I have worked with them on 6 other hotels – including the Congress Hall in Cape May, NJ. This project has been fun because I have really enjoyed getting to know Sag Harbor. I am completely taken with the historic Captain’s cottages.

KDHamptons: What is the biggest difference in your new redesign?

Colleen: We added a new building in the center to join the two existing buildings together. We needed a welcome spot for guests to check in and gather as well as a bar/restaurant – plus we wanted to take full advantage of the water views that this property offers.

KDHamptons: Please describe the different options for guest rooms?

Colleen: The guest rooms at Baron’s Cove boast fresh and bright classic all-American style.   A nod to the nautical past and present of Sag Harbor is reflected in the white, gray, and blue color palette.  Blue skies and harbor-views fill the windows of the double-height living room (which features a pull-out sofa bed) in our Harbor Loft Suite.  The suite is decorated with a charming nautical style and a classic waterfront palette of grays, blues, and white.  Guests can enjoy the privacy of a sleeping loft, as well as a separate bedroom, each with a heavenly king size bed. End the day by lingering over a glass of wine on your very own private deck.

“My favorite local resource was William at The Mill in Southampton. His sisal is amazing !! I used him for carpet in the public spaces,” shares Colleen.

With a private garden, picnic table, and classic teak seating, our Garden Rooms are a breath of fresh air—inside and out.  Each room features hints of nautical style, one plush queen or king bed, a luxurious bathtub or shower, and a roomy floor plan.  (Complimentary portable beds are available with Queen Garden Rooms.)  It’s the perfect place to relax after a day at the beach or taking in the sights of the region.

KDHamptons: What are some of the custom design details you covet?

Colleen: All the guest room furniture is custom – the room rag rugs are a striped in blues and greys [a nod to the nautical motif], and the maps hanging on the walls are a reproduction of the  original map hanging in the Sag Harbor Whaling Museum.

KDHamptons: Who is your chef, and how would you describe the menu?

Colleen: Our classic, All-American restaurant serves breakfast, lunch and dinner featuring fresh and local dishes by chef Matty Boudreau.  Watch the sunset over Sag Harbor Cove from our second floor dining room and outdoor terrace.  Dining room reservations are strongly suggested.  For a more casual experience, enjoy smaller plates in the bar or outdoor patio.  Hotel guests can also order from our special poolside menu throughout the day.
