Spring Drops

 

“Easter just a hop around the corner. Here’s a great, simple, classic and easy dessert to whip up for friends and family, or to hide in plastic eggs for the big hunt,” shares Claire Matern.

Ingredients:

2 egg whites
½ cup granulated or extra fine sugar
½ teaspoon vanilla or almond extract (or whatever flavor takes your fancy)
pinch of salt

 

Directions:

Preheat the oven to 350F. Prepare two cookies sheets with parchment or wax paper. Beat all the ingredients on high until they form a stiff peak. Spoon into a piping bag and pipe the meringue onto the paper. Turn the oven off and put the drops in over night to dry out.
* Yields about two dozen meringues, depending on size.
