Shuko To Open Summer Pop-up at Highway Restaurant & Bar

This summer, New York City’s acclaimed Japanese omakase and kaiseki restaurant, Shuko, heads out East for a unique pop-up dining experience at East Hamptons favorite eatery Highway Restaurant and Bar (290 Montauk Hwy). “Shuko Beach” will be operating Friday & Saturday evenings throughout July (beginning Friday, July 6th through Friday, August 31st); and in August, Thursday night service will be added.

Helmed by two Masa alums – chefs Nick Kim and Jimmy Lau – Shuko received an impressive 3-star review from the New York Times’ restaurant critic Pete Wells in 2015 and is ranked as one of New York CIty’s top sushi restaurants by Eater. Kim and Lau were also nominated for a JBF “Best Chef: NYC” award in 2018.

The following dining experiences will be offered:

Chef’s Counter // Guests who reserve one of the three nightly seatings (6pm, 8pm, 10pm) at the six-seat Chef’s Counter at Highway Restaurant and Bar may enjoy Shuko’s Sushi Omakase menu ($150pp) which consists of a Sunomono (vinegar-based) starter course, and a 16-piece sushi progression featuring local fish from Long Island and beyond.

Dining Room // In addition to Highway Restaurant & Bar’s regular a la carte menu of seasonal, new American dishes with global flair, guests will be able to enjoy curated bento boxes from Shuko for dine-in or take-out. The regular bento box ($180, serves 2) features 12 pieces of sushi and 2 rolls; the large bento box ($360, serves 4) includes 24 pieces of sushi and 4 rolls.
