Red Quinoa Black Bean Veggie Tacos

 

 

KDHamptons contributor & fabulous foodie, Jennifer Rizzo, shares a new favorite recipe for leftovers. Hey, who doesn’t love Tacos?!

 

Jen shares, “So I hate to waste food…and my husband is not a big veggie burger kinda guy, which leaves me with extras at the end of a healthy family meal. So, the next day I turn a veggie burger into “red quinoa black bean tacos” there are so many ways to enjoy these, but mine are served in corn tortillas that were warmed (then formed) to make them gluten free. I love a corn tortilla. #deliciousness!

 

Directions: Cube tomatoes, avocado, dice onions, grate cheddar cheese, and heat veggie burger in microwave briefly and crumble with fork. Fresh cilantro, hot sauce and sour cream make everything better

 

 

 

I have a new love for red quinoa…the owner of Schmidt’s Produce in Southampton came back from a trip to Peru where he fell in love with it and started serving a red quinoa salad (with fruit and vegetables in it) that I am slightly addicted to, so it’s made it’s way into several dishes at my house since then. If you haven’t tried it…I recommend it.
