KDHamptons Recipe: Sweet & Spicy Corn Salad
Delicious sweet corn is in season in the Hamptons and there are so many ways to prepare and enjoy it. Here’s one of my favorite recipes, try it today.
Ingredients:
4 husks of corn [my favorite is from Halsey Farm in Water Mill]
3 tbsp olive oil & 3tsp white wine vinegar
sea salt and ground black black pepper
half avocado, cubed
large handful of cherry tomatoes sliced
chopped arugola
small minced shallot
1 half lemon
2 tablespoons goat cheese [Catapano’s is my favorite] dusted lightly with Cayenne Pepper
Directions:
Slice tomatoes and put in mixing bowl with, olive oil, vinegar, shallot, salt & pepper, and lemon. Mix and let sit.
Bake the corn [in husks] for 25 minutes at 350′, let cool and cut corn off the cob and put in large bowl.
Combine all ingredients in large bowl. Mix, top with chopped arugula, goat cheese and serve.
