KDHamptons Recipe: Parmesan Crusted Whole Roast Cauliflower

Winter storm Grayson has the Hamptons on lock down.  After fourteen inches of flurries, if feels like we are all living inside a snow globe.  When I get cabin fever my favorite thing to do is cook up my own storm. Here’s the menu I created for a cozy meal by the fire with Doc.

INGREDIENTS
1 head cauliflower
1⁄3 cup mayonnaise
1 tsp fresh lemon juice
2 tsp Dijon mustard
1⁄8 teaspoon fresh ground white pepper
1 tablespoon minced fresh chives
3/4 cup grated parmesan cheese
2 tsp minced garlic

DIRECTIONS
Preheat oven to 350 degrees
Steam the whole head of cauliflower for 10 minutes; cool slightly.
Place cauliflower in baking dish.
Mix mayonnaise, lemon juice, mustard, pepper, garlic and chives
Spread mayonnaise mixture all over cauliflower.
Cook about 30 minutes until golden brown
Cool for five minutes to set, then slice into wedges and serve.
