KDHamptons Christmas Morning Recipe: Mini Truffle Quiche with Pancetta & Roasted Potatoes

What will you be serving on Christmas morning?  If you want to serve something savory and decadent try my recipe for Mini Truffle Quiche with pancetta and roasted potatoes which is fairly easy to make.  Merry Christmas!

Ingredients (makes six quiche)
6 eggs
1⁄4 cup milk
6 slices of pancetta
teaspoon truffle salt (I use Hamptons Salt Company)
teaspoon black pepper
1⁄4 cup manchego cheese (I love Mecox Dairy cheeses)
1⁄4 cup parmesan cheese
1 tablespoon minced scallion
1 white potato sliced and baked in advance at 350 for 30min

Directions:
Place one slice of pancetta along the wall of each muffin cup
Add baked potato slice to bottom of cup
Bake these at 450 for 25 min until crispy, remove from oven
Whisk eggs, adding salt, pepper, cheese, and scallion
Spoon mixture into each muffin cup
Bake at 400 for 25 min.
Serve with salad of microgreens, olive oil, lemon, and heirloom tomatoes
