Cheesy Potatoes

 

 

 

KDHamptons reader Jennifer Rizzo shares a great comfort food recipe for the holiday season: Cheesy Potatoes!

 

Jen shares: These potatoes are so delicious and so simple to make. I will tell you that I get asked to bring them to barbecue’s, parties and holiday gatherings. They are a favorite of mine, I DEVOUR them! I made them glutenfree, healthy, and lowfat for those who want. If you would like them straight up southernstyle, cheesy potatoes I made a note for you at the bottom.

Recipe:
1 package Oreida hash browns {southern style diced potatoes}
1 box @pacificfoods #organic #gf cream of mushroom condensed soup
1 small onion diced
8oz reduced fat sour cream
4 tbsp organic butter melted
Several turns of fresh cracked pepper
3 cups Colby & Monterey Jack cheese {I used Sargento reduced fat finely shredded bags}
Topping:
4 tbsp organic butter melted
2 cups @glutinofoods Sensible Beginnings Gluten Free Cereal
Directions:
Combine everything in a large mixing bowl, I do not thaw the potatoes… Mix thoroughly. Put mixture into 9×11 Pyrex or your preferred baking dish. Take the cereal in your hands and crush it over the top spreading around, a handful at a time till you have covered then drizzle the melted butter over top.

*Bake 375 uncovered approx 45 minutes or until your desired brownness.
Note: If you don’t want the healthy/gluten free version just get regular of above items that I bought reduced fat. Use whatever cornflake cereal is your favorite.

I will tell you they are just as delicious made healthier….and that’s why I can go back for seconds with no hesitations!
