Carrot Salad

[ingredients]3 large carrots
1 bunch parsley
2 cloves crushed garlic
3 tablespoons fresh lemon juice
3 tablespoons olive oil
salt & pepper to taste[/ingredients]

[instructions]

  1. Shred carrots by hand or on a food processor.
  2. Loosely chop parsley.
  3. Combine all ingredients in large mixing bowl.
  4. Serve chilled.
